In general we can define as a dark honey, dense , and strong and malty flavor . Forest honey is dark amber color, and has a stronger than other honeys ( less sweet ) taste. It has a high fructose content . It is a honey produced from the sap of trees ( chestnut, gorse , heather ) . It is gathered in high mountains and lush sites.
